I wanted to do something different with couscous and found a blogger who was from Nigeria and had a recipe for jallof rice and couscous. I decided to give it a try. I've had jallof rice with stew fish before from a coworker whose wife sent me the dish. It was spicy but oh so delicious! Now that I am on a strictly plant based diet I decided to leave the fish and just do the jallof couscous. It turned out better than I thought. I did use different ingredients only because I wanted to use homemade items such as the broth that the recipe called for. So let's get to making this tasty side dish TET's way.<br />
<br />
<b>What you will need</b><br />
<br />
<br />
<ul>
<li>1 cup dry couscous</li>
<li>1 1/2 cup broth ( I made my own broth using nutritional yeast and dry veggie seasonings)</li>
<li>1 teaspoon curry powder</li>
<li>1 teaspoon paprika ( I used smoked paprika) </li>
<li>1 medium onion chopped</li>
<li>1 medium red juicy tomato chopped</li>
<li>2 tablespoon oil ( I used extra virgin coconut oil)</li>
<li>1 stalk scallion aka green onion</li>
<li> salt to taste</li>
<li>scotch bonnet pepper to your hot level (I used a dash of cayenne pepper)</li>
</ul>

In a sauce pan sauté vegetables for about 2-3 minutes. Add dry seasoning stir and mix well. Let that sauté a for a little taking care that it does not stick. Add broth pepper and salt to taste. Bring to a rumbling boil then add couscous. Stir to ensure all of couscous is submerged. Now turn off flame and let sit for approximately 10 minutes. After the 10 minutes use a fork to light fluff the couscous. <b><span style="font-size: large;">Vegan Tofu No- Cheese </span></b><br />
I had to find a more affordable non-dairy cheese recipe that does not use almonds or cashew. I live on an island and these are quite costly here so with that I decided to try my hand at a tofu based cheese. Success! It was much smoother and thicker than almond and cashew cheese sauce. It is adaptable to taste so it worked out! Hope you like it. Remember to taste as you go along and make it to your liking.<br />

<b>What you will need:</b><br />

<li>Blender (Food processor or a Vitamix-best)</li>
<li>1 block of firm tofu (not silken...ewwwww)</li>
<li>1/4 cup Olive oil (only use if you use almonds or tofu)</li>
<li>lemon juice ( 1 whole freshly squeezed)</li>
<li>2 cloves of garlic ( can add one more if you want to pack a punch)</li>
<li>Roasted Red peppers (optional if you want the color or just have white sauce- great for Alfredo)</li>
<li>1 cup of hot boiling water</li>
<li>Sea salt(to taste be as generous but not too much) </li>
<li>4 table spoon nutritional yeast flakes</li>
</ul>

<b>Directions</b><br />

Combine tofu, garlic and hot water in the blender or food<br />
processor or vitamix and blend until smooth. Caution! Lemon juice gives the sharp cheddar taste so add 1/2 of whatever amount you squeezed and then add little by little until you achieve the sharp cheddar taste. Next add the<br />
rest of the ingredients. Now remember if you prefer sharp cheddar like<br />
I do you will need to use more almost all of the lemon juice or mild<br />
taste only use half of the lemon juice. Add and taste as you go along.You can add roasted red<br />
peppers to the mix as well. Add enough to get the cheddar cheese<br />
color. About one of the pieces should do. Blend until smooth!.<br />
Taste before adding the salt. Salt will kick it up another notch!<br />

You can use this sauce to make vegan mac-n-cheese or scalloped potato<br />

Yes I said it! Mac-no-cheese! It's one of the comfort foods prepared almost everywhere you go. Well I couldn't resist to try my version that is affordable and did not compromise on taste. This makes a great side dish to enjoy with the chick-unchicken recipe on this blog site. LOL! I will not hold you anymore. Go and enjoy making this version of the all time favorite "Mac-n-cheese"!<br />
<b>Preparing the Pasta</b><br />

If you plan to make the whole box of macaroni you can use the whole cheese sauce. If you use half a box or bag then use enough of the sauce to coat all of the macaroni and then spread the top of the macaroni. Make sure you have a good even spread. Cook macaroni according to instructions on bag or box. Aldante is best. It will yield a more firm pie.</div>

Once the macaroni is cooked drain the water and run cold water from the tap to stop the processing of the pasta. Keep in the colander until ready to add cheese sauce. Put on the side.</div>

Now combine most of the sauce leaving enough of the sauce to pour and coat the the top of the pie. If you want to add a new twist you can add Bacums....alternative to bacon bits. What is humus made from? It is made from chick pea or channa according to where you are from. Do you love humus but want to make your own and don't know how? Well here is an easy recipe a fellow island mama shared with me and she gave me permission to share with my readers. I love humus and we use it on our sandwiches and recently started to put on our salad instead of dressing! Even my little six year old son loves humus and eats it on his salad as well. <b><span style="font-size: large;">Isalnd Callaloo Fritters</span></b><br />

You may be wondering where is the salt-fish that usually go in this island treat. Well remember this is a dairy and meat free blog except for one special post. But trust me you won't miss the salt-fish. We are keeping it all plant based. I enjoyed these so much after ordering them on one of our Island vacation in the British Virgin Islands, Virgin Gorda. The restaurant was nestled amongst tree tops with a view of the picturesque back drop. We saw the different sea colors and felt the cool island breeze as we sipped on our drinks and waited for the callaloo fritters to arrive. They were nothing like mine. They were better but no fear you will enjoy making and eating my version. But I recommend if you ever visit the little but beautiful island Virgin Gorda, please indulge in their callaloo fritters.<br />
We live in Jamaica now and everyone knows that fritters is a great snack but most importantly an easy breakfast staple that goes with bread or just by itself. One islander told me she always enjoys hers with a bowl of cornmeal porridge!<br />
So let's get started on these delectable island treats!<br />

<b>Ingredients</b><br />
<br />
<ul>
<li>1 cup of all purpose flour</li>
<li>2 teaspoons baking powder</li>
<li>1/2 teaspoon sea salt</li>
<li>2-3 table spoons Extra Virgin Coconut oil</li>
<li>1/4 cup oil above for frying ( may need more so keep on hand)</li>
<li>1 cup water</li>
<li>2-3 table spoons Braggs Liquid Amino</li>
<li>1/2 medium onion chopped</li>
<li>1/2 of a green sweet pepper chopped</li>
<li>1 small tomato chopped</li>
<li>1-2 cloves garlic (I love garlic)</li>
<li>1 scallion chopped </li>
<li>1 cup shredded callaloo(be careful not to use the stalk)</li>
<li>Finely chop a small piece of scoth bonnet pepper for kicks!</li>
<li>1 teaspoon garlic powder and any other of your favorite dry seasoning you like to cook with. </li>
<li> A few pinches of leaves of dried thyme( yes because I can't recall exactly how much. LOL!)</li>
</ul>

<b>Directions:</b><br />
Gather the following items: medium mixing bowl, mixing spoon, frying pan, a plate with drain paper or hand towel for draining excess oil from the fried fritters. In a medium bowl combine all dry ingredients. Then combine all wet ingredients. Then fold in all vegetables. If batter is too dry then add a little more water, table spoon at a time to ensure you have a thick but nice consistency. Almost thicker than pancake batter. If too wet then add more flour table spoon at a time to ensure the right consistency as described before. Taste the batter to see if the level of saltiness or flavor is to your liking. It will taste chalky but you can get an idea of what your fritter may taste like. Set aside.<br />
Heat a frying pan on medium flame or heat. Once pan is hot add oil, enough to go 1/4 inch above the bottom of pan. Use your mixing spoon to drop the batter in the pan taking care to not splash the hot oil. Depending on the size of your pan you should be able to fry at least 3-4 fritters at a time. Fry for about 2 minutes on each side or until you have achieved that golden brown color, and crisp. You should see the batter bubble or oil bubbling through the edges of the fritter batter before you turn to the other side to complete frying.<br />
<b>Note:</b> Maintain a consistent heat throughout the whole cooking process to get crispy golden brown color. You will also need to maintain a consistent oil level in the pan and not allow it to dry out.<br />
You have made some island callaloo fritters! If you were not impressed with this batter then remember you can always add or subtract some ingredient you were not particularly fond of. Remember tweak it a little. And as always enjoy a little taste of the island in the sun on behalf of Tasty Eden Treats!<br />

I love buttered popcorn but since leaving dairy out of the picture I found a better alternative and you won't believe it's not butter!<br />
At our holiday party at the beach house I popped some popcorn. I decided to try my secret recipe out with my cousins who do not like anything they call vegan. I don't know if they were just hungry or they really liked the no butter butter flavor popped corn. So I prepared it and put on the coffee table. I barely walked away and the bowl was almost done! I finally revealed my secret. Some were amazed and others did not believe me. So I prepared it right where they could see me. Needless to say I was told I would be on popcorn duty on the next beach party bash we hosted.<br />
If you don't believe me try it! So here goes the recipe.<br />

Things you will need:<br />

Popped corn (plain )<br />
Coconut oil or Canola oil<br />
Sea Salt<br />
Nutritional Yeast flakes<br />
Large bowl for tossing<br />

Directions:<br />

Place popped corn in the bowl. Drizzle oil then add salt and nutritional yeast flakes and toss. Taste and season as desired. Voila! That easy and tasty too! Just like you use to buy at the movies. I hope you enjoy it as much as we did. That's another popping idea from Tasty Eden Treats!<br />

Honey Salted Popcorn<br />

I stumbled on this recipe by accident. I wanted something sweet to eat and wanted popcorn as well. So I decided to pop some popcorn. At first I just used coconut oil and sea salt. Ooo it was so delicious! Then I saw the honey and took a pop corn and dropped a little honey on it. Popped it in my mouth and BOOM! Just like that my taste buds could not stop yearning for the sweet and salty taste. It was almost like salted toffee or caramel flavor. I think it was a hit with my son and hubby. It does get a little sticky but it's worth the sticky fingers.<br />

<li>Coconut oil</li>
<li>Sea salt</li>

Pop popcorn as directed on the label. Once done popping the desired amount of popcorn add coconut oil, then honey then sea salt. Now toss and enjoy!<br />

A meal in a crock pot. I am finding that the crock pot saves a lot of time and clean up. A friend of mine, a busy mom of two children under the age of 5 years of age, asked me if I had any crock pot recipes to share. She was tired of the same thing in a crock pot and right then and there I got a revelation! Lasagna in a crock pot! Let me tell you....it had me fooled. I did not have to turn on the oven. Just layered the crock pot and turn it on and it was done in 1.5 hrs! YES! 1.5 hrs! In a medium sauce pan add sauce, sugar, onion and garlic powder, nutritional yeast, meat/TVP, oregano flakes, and heat for 10 minutes on the stove top. In a small bowl mash tofu and add parsley flakes together. Use large cooking spoon and place 2 spoons of sauce first in the crock pot. Sprinkle 1 table spoon of the tofu and parsley over the sauce. It does not matter how the noodles are placed in the pot as long as you have coverage. You get excited and make it only to find out not so much. Well I would like to trust that my taste buds are pretty much on point when it comes to food. I must tell you your taste buds will not miss cheese once you taste this recipe. You do have to tweak it to your taste buds as with anything you make. </span><br />

1 cup of cashew or (slivered or skinless if you can find) almonds( I am allergic to cashew so I used almonds)</div>

Olive oil (only use if you use almonds)</div>
<div style="font-family: "georgia" , serif; font-size: 100%; font-weight: normal;">
lemon juice ( 1 whole freshly squeezed)</div>

1 clove of garlic</div>

Roasted Red peppers (optional if you want the color or just have white sauce- great for Alfredo)</div>

1 cup of hot boiling water</div>

Sea salt(to taste)</div>

2 table spoon nutritional yeast flakes</div>

Combine cashew or almonds, garlic and hot water in the blender or food processor or vitamix and blend until somewhat smooth. Next add the rest of the ingredients. Now remember if you prefer sharp cheddar like I do you will need to use more almost all of the lemon juice or mild taste only use half of the lemon juice. You can add roasted red peppers to the mix as well. Add enough to get the cheddar cheese color. About one of the pieces will do. Blend until smooth! You may have to keep adding olive oil to make the mix smooth if you are using almonds because of their low oily/fatty content than cashew. just keep adding the olive oil until you achieve that smooth creamy texture. Taste before adding the salt. Salt will kick it up another notch!</div>

You can use your favorite pasta sauce. About half a bottle should be good enough. Add to it the following and mix together:</div>

I must say this recipe is a gluten free one as well. My mom is on a strict gluten free diet and I decided to create this recipe. </div><div><br /></div><div>What you will need:</div><div><br /></div><div>Ingredients:</div><div><br /></div><div>1 can Organic Black beans drained, rinsed, mashed</div><div>1 onion chopped</div><div>1 Large Onion sliced</div><div>fresh thyme or dried</div><div>2 table spoons spike seasoning</div><div>1 cup gluten free corn meal or corn meal if not a gluten free diet</div><div>1 to 2 cups gluten free all purpose flower or regular flour</div><div>1 table spoon sea salt</div><div>2 table spoon Olive oil</div><div>Any of your favorite dry seasonings are a good thing too. </div><div>1/2 cup water</div><div>Additional Oil for cooking</div><div><br /></div><div>Pre-heat oven to 170 degrees</div><div>Combine all ingredients except corn meal and sliced onions. I just happened to want some chili and cornbread but not just any cornbread. I've made this before for potluck with some friends and it was a hit! I didn't really measure anything but hey it turned out well. I am not a self proclaimed baker but I will attempt anything once. Be sure to grease pans first before pouring batter into them.<br />Combine dry ingredients first then combine wet ingredients and blend together with a spoon. Add enough of the wet ingredients to make batter thick. Not too thin or runny. Now bake in the oven for about 45 minutes or if additional time is needed. Use a toothpick or knife to poke the middle of the bread check if it is cooked and ready. You should not see any of the batter on the toothpick or blade.<br /><br />When done, let cool before serving. You can enjoy the cornbread for breakfast or with a bowl of chili. In a large pot sautee onion, mushroom and chicken together. When onions are tender add mushroom soup. Stir in cream cheese until melted. Let simmer for about 10 minutes. In a long pan cover the bottom of pan with some of the soup then add a layer of noodles. Usually 3 will fit across the pan. Do not over lap noodles in pan. Then add more sauce. Sprinkle cheese. Add another layer of noodles and so on. Build 3 layers or more if you are using a deep pan. Do not over fill. Remember noodles will expand. </p><p>Once the layers are complete. Let sit for 15 minutes with foil on top. After 15mintues take foil off and sprinkle cheese and then a little paprika on top. Place in oven to bake with foil ontop until cheese melts. Then let's make this dessert.<br /><br /><div style="text-align: center;"><span style="font-weight: bold;">Things you need:</span><br /><br />3 medium ripe mangoes<br />1 bag of dehydrated mango pieces<br />6 large strawberries or medium ones enough to garnish<br />3 1/2 cups raw almonds (not roasted)<br />dates (this was what I forgot so I used Agave nectar instead)<br />1/2 teaspoon salt<br />a standard pie pan<br />1/4 cup cold water<br /><br /><div style="text-align: left;">Pie crust:<br /><br />In your Vitamix or food processor chop almonds and dates together. If no dates then place almonds in a bowl. Add agave nectar and blend with a large spoon until mix appears sticky and and moist. Then spoon mixture into pie pan pressing in firmly until pie crust is formed<br /><br />Filling:<br /><br />Peal mangoes and puree in food processor or Vitamix with dehydrated mangoes. Tasty Eden Treats is back in the kitchen. It has been awhile and I sure do hate to disappoint my members or readers. So I know I am no Racheal Ray or Ms. Perfect..."Semi Homemade" chef..but I came up with a quick meal the whole family can enjoy and you can prepare in 3o minutes if done right. So the two main ingredient for this dish is soy chunks/tvp and couscous. This dish can be eaten as a side dish or a one pot dish or for brunch...like I did.<br /><br />I was able to find soy chunks on one of my many trips to Florida, at a local grocery store. You can find it at your local healthfood store or maybe at Whole foods. I like the "Lion of Judah" Vegetarian Soya Chunks brand. It is derived from a soybean flour and it dehydrated for long time use. The website is <span style="color: rgb(0, 153, 0);">www.lionofjudahbrand.com</span>. TVP (<span style="font-weight: bold;">T</span>extured <span style="font-weight: bold;">V</span>egetable <span style="font-weight: bold;">P</span>rotein) I found here in West Virginia in my local Martin's grocery store in the health food section. TVP is high in complete proteins and contains no fat making it an excellent meat substitute. It is also wealthy in iron, fiber, magnesium and phosphorous. You can use this flavor free item to use in any dish seeing that it takes on the flavor of whatever dish you add it to. The brand I like and use is Bob's Red Mill High Protein TVP. It is also gluten free for those of you who are on a gluten free diet. Their web address is<span style="color: rgb(51, 204, 0);"> <span style="color: rgb(0, 153, 0);">www.bobsredmill.com.</span></span><br /><br />Now that I have bored you with the details, it's time to cook this delicious recipe! So go to the kitchen and get your stuff together. If you have to go the grocery store then do so and get ready to cook.<br /><br /><div style="text-align: center;"><span style="font-weight: bold;">Things you will need:</span><br />1/3 cup TVP<br />1/2 cup soya chunks<br />1 medium onion diced or chopped<br />1/3 cup red or green pepper<br />1 clove garlic chopped<br />1 box Near East Roasted Garlic and Olive Oil Couscous<br />vegetable oil to saute vegetables and soy/tvp<br />African hot pepper oil or crushed red pepper<br />garlic powder<br />sea salt<br />any frozen vegetables i.e broccoli, asparagus, corn, mushroom etc. I used what I had available<br />Vegetarian/Vegan chicken seasoning<br /><div style="text-align: left;"><br />First prepare TVP and Soya Chunks. Bring to boil 1 1/2 cup of water with chicken seasoning, salt and garlic powder. Pour over Soya Chunks and TVP in a bowl. Let sit for 10 minutes or so.<br />Once ready to use drain in a strainer and use back of a spoon to squeeze excess broth out of them. Then set aside for use.<br /><br />While TVP and Chunks are rehydrating you could be preparing the couscous as directed on box. As you wait for the couscous, heat your skillet with enough oil to coat bottom of pan and sautee onion, pepper and garlic. Then add drained tvp and chunks to pan and saute until somewhat golden in color, taking care not to burn veggies. At this point add frozen veggies to the mix. You may have to add a little more oil to the mixture as well as a few dashes of the African pepper oil or 1 table spoon of the crushed red pepper for the kick! Now you can add the couscous to the mix and make sure it is blended well together.<br /><br />You can taste and and spice as you desire. I served my dish up with some fried plantains. Your dish may be served with a side of fresh green salad, or steamed veggies, or just as a side dish to substitute for rice or potatoes.<br /><br />I am so glad that I can share another Tasty Eden Treat with you.....in 30 minutes. I had the opportunity to have lentil stew as an appetizer with warm homemade bread. mmmm. So my friends Michell and Angela shared the recipe with me and now I will share it with you. You can use a lot of garlic and onion if desired for more flavor. In the crock pot combine all ingredients. be sure that you have enough water/broth to cover lentils. Let cook on low or high settings depending on how long you will be around or away. Cooking time on lentils in the crock pot is not long at all. Maximum time is probably 4 - 6 hours depending on your crock pot. My first time tasting sweet potato was in the form of the popular dish....Candied Yams. I was born on the beautiful island of Jamaica and what I have known as sweet potato is white in color and is actually sweet. Very nice root vegetable and is one of my favorite. My dad grows in on his land there in Jamaica. <br /><br />I had a conversation with a co-worker one day and she told me one of the benefits of consuming sweet potato. I almost laughed and ran to the store the next day to stock up on some! It was believed that if you eat a good amount of these in your diet you can be quite fertile....LOL! But hold on don't run just yet....she said with twins or multiple births...then I walked to the store. Needles to say, I am sure it has other benefits but that one was quite the thing for those of us who would like to use natural methods of fertility. LOL! So enough of my talk now let's cook and eat.<br /><br />For a different twist on sweet potato I decided to make little pancakes to serve for my bruch.<br /><br /><div style="text-align: center;"><span style="font-size:130%;"><span style="font-weight: bold;">Sweet Potato Pancakes</span><br /></span><br /><span style="font-weight: bold;">What you will need:</span><br /><br /><ul><li>1 Large Sweet Potato</li><li>Mandolin with the julian blades</li><li>1/2 teaspoon sea salt</li><li>1 table spoon pure maple syrup or brown rice sugar</li><li>cinamon</li><li>1 teaspoon Earth balance vegan butter</li><li>1 teaspoon vegetable oil</li><li>non-stick frying pan</li></ul><br /><br /><span style="font-weight: bold;">Preparation:</span><br /><br />shred potatoe on mandolin. Heat your skillet with oil and butter but not too hot. Just hot enough to get a little sizzle. Carefully place shredded potato in pan and sautee for a few minutes. Add all other ingredients and sautee a few more minutes until potato begin to stick together. At this point you can use your spatuala to shape them into small round patty or silver dollar pancake size. Cook on each side until brown. You can taste a shred to see if it is cooked. This will take about 20 minutes or so. Serve it up with your items for brunch! On my way home from shopping I came up with the idea of just wanting to create a dish with noodles. She told me what recipe she used but thought it was kinda ok and did my own thing. And now I can share it with you. As you know I love food! I really should have been a chef but I chose the medical field instead.<br /><br />This recipe was very tasty and I do look forward to the left overs. It should taste even better the next day mainly because the ingredients have time to marinate over night. The noodles is a first for me and I wish I could tell you the name because the writing on the bag was in another language. I am sure if you visit your nearest Korean or Asian market you can ask someone to help you locate some. When preparing the noodles to use in your recipe it will require you to pay close attention to it while it is boiling or your noodles can come out to be very soft and mushy. So.... let's get ready to cook!<br /><br /><span style="FONT-WEIGHT: bold">Things you will need:</span><br /><br />Wok pot or large frying pan<br />1 block of extra firm tofu diced into chunks<br />1 medium onion chopped<br />1/3 cup red pepper or whatever color you choose chopped<br />1/2 pack sweet potato noodles<br />2 garlic cloves chopped<br />2 tbsp Sesame oil<br />3 tbsp vegetable oil<br />1 tablespoon garlic powder<br />1tablespoon sea salt ( or salt to taste)<br />Vegan/Vegetarian mock chicken seasoning<br />1/3 cup spring onions chopped<br />1/2 cup carrots chopped<br />1 small tomoto chopped<br />1 cup Shitake mushroom<br />1 sweet corn on the cob (cut corn off the cob)<br />1 teaspoon crushed red pepper (optional) my hubby likes a little heat in his food!<br />1 cup chopped spinach<br /><br />Be sure your noodles are cooked and ready to go. You may cook noodles for 10 minutes or until tender or soak them in hotwater until tender. Do note that you must pay close attention to your noodles so as to not have over cooked, mushy noodles.<br />Fry tofu in wok or frying pan until crispy or golden brown using both oils. Again if you are trying to limit the amount of frying of foods you may choose to bake your tofu until golden, crispy brown. You may sprinkle some of your sea salt on the tofu while frying ( baking). Stir in all veggies except spinach and sautee with tofu. Now you may add all dry ingrediets to taste.<br /><br />Now stir in noodles a little at a time until all ingredients are blended well. I made the mistake of stiring in all of my noodles at once which made it somewhat difficult to mix the igredients. Immediately after stir in spinach until wilted but still mainiting the bright green color. At this point you can taste your food and see whatelse you can add to the dish..etc. more seasalt, garlic powder or chicken seasoning.<br /><br />Now you are ready to serve up your dish! MMmmmm mmmm! One whole meal in a pot! You can add more to your noodle dish if you so choose. Don't hesitate to experiement or improve upon dishes you've tried. You can serve up this Tasty Eden Treats meal with a nice salad and a refreshing drink.<br /><br />Enjoy and until next time. <br /></span><span style="line-height: 115%;font-size:12;" >"Hi Tasty Eden Treats readers/bloggers. Here is a tasty treat I made from roasted red peppers, fried green & yellow peppers, artichoke hearts, sundried tomatoes, and vidallia onions.
<br />First I cook the onions and peppers in olive oil with curry spice and corriander, salt and pepper to taste.
<br />Then I add the rest of the ingredients and cook until tender. If it's for myself I also add mushrooms. (The rest of the family doesn't like them).
<br />Then I grill or bake Tandoori Nan loaves and I place Feta cheese over them.
<br />Last, I place the veggies on top and serve. Yummy. No measurments; everything is to taste. Enjoy!
