Black Eye Pea Patties


Black eye pea is very bold tasting legume. I chose to use this pea to create a nice meal. So here it is. My black eye pea patty.

I must say that it is very tasty and even surprised my taste buds. In the pic you see, it is plated with wild mushroom and herbs couscous and organic brussel sprouts with tomatoes in a butter herb sauce. Talk about good and this is not just because I made it.

Black Eye Pea Patties
2 cans Black eye pea drained and rinsed
1/2 medium onion
1 medium tomato
2 cloves garlic
1 cup all purpose flour
1 teaspoon sea salt
1 teaspoon garlic powder
1 teaspoon crushed red pepper ( you can use less if you are not too big on spice)
3/4 cup vegetablel or olive oil
more oil for frying
1 cup of your vegan/vegetarian mock chicken broth....I used Bill's mock chicken powdered seasoning in 1 cup of water.
bread crumbs
more flour for breading
parsley flakes or fresh chopped parsley
2 tablespoon Spike seasoning

In your food processor combine peas, broth, and oil and bled till somewhat smooth. Pour into a medium or large bowl. Chop onion and tomato in food processor by pulsing so that it does not become pureed. Fold into mix in the bowl and add all of your other ingredients EXCPET parsely, bread crumbs and flour.

Now get your oil ready in your frying pan or you can choose to also bake them in the oven if you are trying to reduce frying your foods. You will still get the same effect just a little more dry if anything.

Get two plates and in 1 place about a cup of flour. In the next plate add bread crumbs and parsley.

Use your icecream scooper and scoop and drop the mix on the flour. Use your hands to sprinkle some of the flour on the top of the mix. Carefully pick up the mix and put it on the plate with the bread crumbs and do the same thing. Then place the now formed patty into the frying pan. Be careful not to burn or splatter the oil while placing it in the pan.

Now watch your patty fry and then taste once done! I did...ok I ate about two of them. This batch yeild about 10 medium size patties. You can plate this with your favorite side dish. I chose to use a boxed couscous for time sake.

  3. What a healthy dish. I've only used black eyed peas in soups so far, but these patties sound really delicious and hearty. The other ingredients you paired it with look yummy too!
