Crock Pot Vegan Lasagna



To all busy mothers out there looking for an easy 1-2-3 recipe here is the recipe for you. A meal in a crock pot. I am finding that the crock pot saves a lot of time and clean up. A friend of mine, a busy mom of two children under the age of 5 years of age, asked me if I had any crock pot recipes to share. She was tired of the same thing in a crock pot and right then and there I got a revelation! Lasagna in a crock pot! Why not?

I tried it and it is all vegan! Let me tell you....it had me fooled. I did not have to turn on the oven. Just layered the crock pot and turn it on and it was done in 1.5 hrs! YES! 1.5 hrs! So without any delay because you are busy here it is.

What you will need:

Crock pot ( my crock pot is round but any shape will do)
Pre-cooked lasagna
1.5 jars of your favorite meat free pasta sauce
2 table spoon turbinado sugar ( or your favorite sweetener)
2 tablespoon oregano flakes
olive oil
2.5 -3 cups of vegan cheese sauce (see my vegan cheese sauce recipe)
1/2 block extra firm tofu
1 cup of your favorite vegan alternative ground meat ( I used Textured vegetable Protein-TVP)
1 tsp onion powder
1 tsp garlic powder
1 tsp sea salt
2 tsp nutritional yeast flakes
1 tsp parsely flakes

Instructions:

Turn on the crock pot to hi setting. In a medium sauce pan add sauce, sugar, onion and garlic powder, nutritional yeast, meat/TVP, oregano flakes, and heat for 10 minutes on the stove top. In a small bowl mash tofu and add parsley flakes together. Use large cooking spoon and place 2 spoons of sauce first in the crock pot. Sprinkle 1 table spoon of the tofu and parsley over the sauce. Then add 2 table spoon of the cheese sauce and spread over the sauce and tofu as much as possible (see photo below).

Break noodles and place on top of the sauce. It does not matter how the noodles are placed in the pot as long as you have coverage. See picture below:

Continue to layer until you have 4 layers. Keep in mind the lasagna will rise in the pot. Drizzle olive oil on the first two layers.

Last layer should look like this below:


Place lid on crock pot and cook for 1.5 hrs or until noodles are cooked. Mama mia!

This lasagna will take your kitchen to another level and everyone will think you slaved over a hot oven or stove to make this scrumptious meal.
