Vegetarian Chicken & Mushroom Lasagna
Hello and Happy New Year Tasty Eden Treats readers! I am excited to see that you are still visiting the blog and trying out the recipes at home. Now I am back with new recipes for you to try in this new year. I decided to make a near vegan version of my chicken lasagna. It has been a while since I've made this and thought that it was time to make this dish again. It is delicious with a nice green leafy salad and and home made garlic bread. Let me just get to it and give you the recipe so you can get in the kitchen and create a great, easy and mouth watering meal. Enjoy!
Things you will need:
- 1 box lasagna noodles ( I use the kind that doesn't require me to boil first. This cuts preparation time in half. But if you wish to use the uncooked version then have at it)
- 1 box of Quron vegetarian chicken or Gardein chicken or your favorite vegetarian/vegan chicken brand chopped
- 1 large onion chopped
- 1 cup portabella mushroom or regular mushrooms chopped
- 4 cups dairy/meat free condensed creamy mushroom soup (if you choose to do the vegetarian version you may just use regular condensed mushroom soup) DO NOT DILUTE
- 2 table spoon MacKays vegan chicken seasoning or your favorite vegetarian chicken seasoning
- 1 table spoon garlic powder
- 4 cups shredded Vegan mozzerella cheese or vegetarian cheese ( again you can choose to use regular mozzerrella cheese)
- 1 heaping table spoon of vegan Tofuti cream cheese ( you can use regular cream cheese)
- salt and pepper to taste (optional) all other ingredients should have more than enough salt. I encourgage to limit the salt intake.
- 4 Table spoon olive oil for sauteeing
Pre heat oven at 350 degrees. In a large pot sautee onion, mushroom and chicken together. When onions are tender add mushroom soup. Stir in cream cheese until melted. Let simmer for about 10 minutes. In a long pan cover the bottom of pan with some of the soup then add a layer of noodles. Usually 3 will fit across the pan. Do not over lap noodles in pan. Then add more sauce. Sprinkle cheese. Add another layer of noodles and so on. Build 3 layers or more if you are using a deep pan. Do not over fill. Remember noodles will expand.
Once the layers are complete. Let sit for 15 minutes with foil on top. After 15mintues take foil off and sprinkle cheese and then a little paprika on top. Place in oven to bake with foil ontop until cheese melts. Yes it does melt! Then bake uncovered for 10minutes.
